Ingredients

Original recipe (1X) yields 6 servings

  • 2 cucumbers - quartered, seeded, and thinly sliced

  • 2 carrots, shredded

  • ¼ onion, grated

  • 2 tablespoons white sugar

  • 1 ½ teaspoons ground coriander

  • 1 teaspoon kosher salt

  • ½ teaspoon coarse ground black pepper

  • ¼ cup apple cider vinegar

Directions

  1. Combine cucumbers, carrots, onion, sugar, coriander, salt, and black pepper together in a bowl; add vinegar and mix well.

Recipe Tips

The slaw tastes great right after it's made, but letting it sit for at least an hour will blend the flavors best.
