This is a very light dressing found in some Japanese restaurants.

Ingredients

Original recipe (1X) yields 2 servings

  • 2 tablespoons mirin (Japanese sweet wine)

  • 1 tablespoon champagne vinegar

  • 1 ½ teaspoons sunflower seed oil

  • 1 ½ teaspoons hazelnut oil

  • 1 teaspoon white sugar

  • ¼ teaspoon toasted sesame oil

  • ¼ teaspoon ground ginger

Directions

  1. Beat mirin, champagne vinegar, sunflower seed oil, hazelnut oil, sugar, sesame oil, and ground ginger together in a bowl until smooth.

  2. Let dressing sit at room temperature until the flavors blend, at least 30 minutes.

Cook's Note:

You can use just 1 tablespoon of either sunflower seed oil or hazelnut oil if you don't wish to use the half-and-half mixture of the two.
