I love my weeknight chuck roast that cooks all day in the slow cooker. Just season and add to your slow cooker and when you come home dinner is waiting! All you need to do is add your favorite sides; most of them can also be made in advance.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 (4 pound) beef chuck roast

  • 1 ½ teaspoons sea salt

  • 1 teaspoon ground black pepper

  • 2 yellow onions, quartered

  • 3 cloves garlic, or more to taste

  • 2 cups beef broth

  • 1 cup vegetable broth

  • 3 bay leaves

  • 3 sprigs thyme, chopped

Directions

  1. Season beef chuck roast with sea salt and black pepper; put into the crock of a slow cooker with onion quarters and garlic cloves. Pour beef broth and vegetable broth over the roast. Lay bay leaves and thyme atop the roast.

  2. Cook on Low for 7 to 8 hours.

Cook’s Note

You can use 2 teaspoons dried thyme instead of fresh if you prefer.

If you have a large enough slow cooker, buy a big roast or 2 smaller ones and make several other meals for the rest of the week — or freeze and save for later! The slow cooker is on, so why not fill it with yummy food?
