Zucchini Parmesan with Tomato Sauce

This is my favorite zucchini side dish that goes great with chicken or fish or served over rice or pasta.

Ingredients

Original recipe (1X) yields 4 servings

  • 2 tablespoons olive oil

  • 4 zucchini - trimmed, sliced lengthwise and sliced

  • 2 teaspoons dried oregano

  • 2 teaspoons dried basil

  • 1 ½ cups tomato sauce

  • ¼ cup shredded Parmesan cheese

Directions

  1. Heat olive oil in a large skillet over medium-high heat; sauté zucchini slices until softened, about 5 to 10 minutes.

  2. Season zucchini with oregano and basil. Add tomato sauce; cook and stir until heated through, about 5 minutes. Sprinkle Parmesan cheese on top.
