My parents ate at a diner that served a pineapple coleslaw, and my Dad has tried to mimic it. This is me mimicking his imitation!

Ingredients

Original recipe (1X) yields 20 servings

  • 1 medium head green cabbage, chopped

  • 1 fresh pineapple, peeled, cored, and cut into small pieces

  • 4 green onions, chopped

  • 1 bell pepper, chopped

  • cup white vinegar

  • ¼ cup mayonnaise

  • 1 tablespoon white sugar

  • 1 teaspoon salt

  • ¼ teaspoon ground black pepper

Directions

  1. Combine cabbage, pineapple, green onions, and bell pepper in a large bowl.

  2. Whisk vinegar, mayonnaise, sugar, salt, and black pepper together in a separate bowl; toss with cabbage mixture to coat.

  3. Cover bowl with plastic wrap and refrigerate at least 2 hours before serving.
