This Hawaiian meatloaf is easy to make and tastes great. It is one of my husband's favorite dishes.

Ingredients

Original recipe (1X) yields 8 servings

Meatloaf:

  • 1 pound ground beef

  • ½ cup bread crumbs

  • ½ cup chopped green and red bell pepper

  • 1 small onion, diced

  • 1 egg

  • cup ketchup

  • ¼ cup pineapple preserves

  • ¼ cup brown sugar

  • ¼ teaspoon garlic powder, or to taste

  • 1 teaspoon Worcestershire sauce

Sauce:

  • cup ketchup

  • ¼ cup pineapple preserves

  • ¼ cup brown sugar

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Mix ground beef, bread crumbs, bell peppers, onion, egg, 1/3 cup ketchup, 1/4 cup pineapple preserves, 1/4 cup brown sugar, garlic powder, and Worcestershire sauce in a food processor until combined; put into a bread pan.

  3. Bake in the preheated oven for 30 minutes.

  4. Stir 1/3 cup ketchup, 1/4 cup pineapple preserves, and 1/4 cup brown sugar together in a bowl; pour over meatloaf.

  5. Continue baking until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
