This mahi mahi with lemon marinade is a quick prep and a great way to cook fish. I added sides of fresh salad and artichokes to complete the meal. It's perfect for dinnertime!

Ingredients

Original recipe (1X) yields 4 servings

  • 1 cup white Zinfandel wine

  • 3 tablespoons lemon juice

  • 4 cloves garlic, crushed

  • 1 teaspoon salt, or to taste

  • 1 teaspoon ground black pepper, or to taste

  • 4 (8 ounce) mahi mahi fillets

Directions

  1. Preheat an outdoor grill for medium heat and lightly oil the grate.

  2. Stir wine, lemon juice, garlic, salt, and black pepper together in a shallow bowl. Place mahi mahi fillets in the bowl and turn to coat; allow to marinate for 10 minutes.

  3. Remove fillets from marinade, shaking off any excess moisture. Discard marinade.

  4. Cook fillets on the preheated grill until fish flakes easily with a fork, 4 to 5 minutes per side.
