Ingredients

Original recipe (1X) yields 24 servings

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup unsalted butter, softened

  • ¾ cup white sugar

  • ¾ cup brown sugar

  • 2 eggs

  • 2 cups butterscotch chips, divided

  • 1 ½ cups quick-cooking rolled oats

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.

  2. Whisk flour, baking powder, baking soda, and salt together in a bowl.

  3. Mash butter, white sugar, and brown sugar together in a large mixing bowl until smooth; beat in eggs until creamy mixture formed. Gradually beat in flour mixture, 1 1/2 cups butterscotch chips, and rolled oats.

  4. Press dough into the prepared baking dish; sprinkle top with remaining 1/2 cup butterscotch chips.

  5. Bake in the preheated oven until top is golden brown, 30 to 35 minutes. Let cool in pan before cutting into 24 bars.
