Ingredients

Original recipe (1X) yields 6 servings

  • ½ cup olive oil

  • ½ cup balsamic vinegar

  • 1 clove garlic, minced

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 4 cups baby spinach, rinsed and dried

  • 2 cups arugula, rinsed and dried

  • 2 cups grape tomatoes

  • 1 cup fresh bocconcini cheese, cut into bite-sized pieces

  • 1 cup minced red onion

Directions

  1. Combine olive oil, vinegar, garlic, salt, and black pepper in a jar with a lid; set aside.

  2. Combine spinach, arugula, tomatoes, bocconcini cheese, and onion in a pretty serving bowl. Shake vinaigrette vigorously to combine; drizzle over salad to serve.

Editor's Note

The term "bocconcini" refers to a ball of fresh mozzarella about 1-inch in diameter. Since this recipe calls for the cheese to be cubed anyway, feel free to buy any size ball of fresh mozzarella.
