This rainbow pasta salad is good for all seasons. The terrific Italian-flavored pasta salad is loaded with broccoli, pepperoni, and cheese.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 (16 ounce) package tri-color rotini pasta

  • 1 (16 ounce) bottle Italian-style salad dressing

  • 1 (8 ounce) package mozzarella cheese, shredded

  • 1 cup fresh broccoli florets

  • 1 (6 ounce) can black olives, drained and sliced

  • 4 ounces sliced pepperoni sausage

Directions

  1. Fill a large pot with lightly salted water and bring to a rolling boil. Stir in rotini and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and rinse twice in cold water.

  2. Toss cooked pasta, dressing, cheese, broccoli, olives, and pepperoni in a large bowl until well combined.

  3. Cover and refrigerate for at least 1 hour before serving.
