Add 1/2 cup mayonnaise, salt, and pepper and stir to combine. Stir in flour just until mixture comes together. Preheat the oven to 200 degrees F (93 degrees C). Place a rack inside a sheet pan and set in the oven while it preheats. Heat 1 1/2 tablespoons oil in a large, nonstick skillet over medium-high heat. Working in batches, spoon about 1/4 cup of chicken mixture into skillet for each patty. Cook, undisturbed, until golden brown, about 4 minutes. Flip and cook until golden brown and cooked through, 3 to 4 minutes more. An instant read thermometer inserted near the center will read 165 degrees F (74 degrees C).
