Starbucks egg bites are a great on-the-go breakfast that are known for their creamy, tender texture thanks to the sous vide cooking method. Thankfully, you can get the same results at home without the sous vide.

How to Make Starbucks Egg Bites In the Oven

There are two key elements for getting that signature sous vide egg bite texture in your oven. After a lot of trial and error, we've found two key elements to get perfect copycat Starbucks egg bites at home:

  • Cottage cheese: Turns out this suddenly popular classic ingredient was the key to getting the texture just right. And if you hate cottage cheese, don't worry! It gets blitzed in the blender until smooth making it undetectable in the final bites. It just helps the eggs firm up to a nice tender yet fluffy bite while adding a bit of salty tang to the flavor.
  • Water bath: You don't need to buy a sous vide machine to get sous vide-style egg bite. This is where the water bath comes in: just set your muffin tin with the egg mixture into a pan with boiling water before putting it in your oven. This will give the egg bites a steamy environment to cook in. The steam gently heats the eggs, preventing them from rising too quickly (which causes large and uneven air bubbles throughout) and from browning, giving the bite a soft texture from exterior to interior.

Ingredients

Original recipe (1X) yields 6 servings

  • 1 tablespoon extra-virgin olive oil, or as needed

  • 8 large eggs

  • 1 cup full-fat cottage cheese

  • 1 cup shredded Gruyère cheese, divided

  • 1/2 cup shredded Monterey Jack cheese

  • 1/4 teaspoon hot sauce (optional)

  • 1/4 teaspoon kosher salt

  • 1/4 teaspoon ground black pepper

  • 3 strips bacon, cooked and chopped

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). Coat a 12-cup silicone or other nonstick muffin pan with olive oil. 

  2. Combine eggs, cottage cheese, 3/4 cup Gruyère, Monterey Jack cheese, hot sauce, salt, and pepper in a blender and blend at medium speed until smooth, about 30 seconds.

  3. Meanwhile, bring a large pot of water to a boil. 

  4. Place the greased muffin pan in a large, high-rimmed baking pan (a jelly-roll pan works well). Sprinkle the remaining 1/4 cup Gruyère cheese and bacon among the prepared cups. Then divide the egg mixture among the cups, filling them about 3/4 full.

  5. Carefully pour boiling water into the rimmed pan (avoiding eggs), until water reaches halfway up the sides of the muffin pan. Carefully transfer to the oven and bake until eggs are just firm, about 25 to 30 minutes. Let cool 5 minutes before removing the bites from the pan.
