It was delicious. I added a bit more salt at the end, even though I am a person that always holds back on salt, but it needed a touch more. I also added a drizzle of honey, which gave it a nice flavour. Do remember to add the raisins and coconut on top, as that makes it perfect.

I have made this several times. My family can't get enough of it. We used to get this in a Chinese Restaurant, but moved away from that city. Every family get-together, they request this dish. The only thing that makes it better (the same as the restaurant), is that I cook 3 large sausages (taken out of the casings)- cooked separately, then added to the Spicy Eggplant dish when it's all completed. The sausage meat that I buy is mild, since the eggplant dish is spicy. With the sausage meat, just keep chopping it up with a wooden spoon until it's in small pieces. Add to the Eggplant dish at the end. So yummy.

I made the recipe exactly as written. These muffins were absolutely amazing ! The texture was soft and they were delicious. I don't usually make toppings for other muffin recipes that I have, but glad I did with this one. It was a nice crunchy bite. Will make these often. Thank you for this recipe.

Absolutely delicious ! Perfect texture. Some meatloaf recipes I have made result in the meatloaf falling apart or one that was too firm.

I used only Whole Dried Cranberries instead of fresh cranberries and also diced apples. I did not add any other fruits or nuts. They were totally amazing ! They rose higher in the muffin pans than any muffins I have ever made, and were very delicious. I think you could use just about any fruit in this recipe, although the batter was very thick , so perhaps delicate fruits like fresh blueberries or raspberries would not stand up as well. I will try it again with figs, or dates and nuts. I will definitely make this again.

Nice flavour. This is what an oatmeal cookie should be. The raisins gave a nice sweetness . They were soft, and remained that way. Everyone loved these..
