Like Carrie and company making Cosmopolitans and cupcakes cool, the actor, mom, entrepreneur, and book publisher has a gift for putting things on the map. Her Instagram feed is jam-packed with recommendations for books to read, wines to sip, and fashion trends to try. Every so often, she also offers us a sneak peek into her kitchen to share recipes she loves. Like some of our favorite celebs—hello, Stanley Tucci and Jennifer Garner—Parker and her partner Matthew Broderick seem to look forward to creating memories together over food. For the couple, bolognese is a weekly occasion, a simple lemon potato side dish is Parker’s “holy grail,” and Broderick soaks three batches of specially-ordered beans per week, Parker revealed back in 2021. So what does Parker turn to when she’s craving comfort food? According to a recent interview on the podcast Ruthie’s Table 4, it’s her simple, no-recipe-required seared pork (or lamb) chops. How to Make Sarah Jessica Parker’s Heavenly 3-Ingredient Comfort Food Dinner To follow SJP’s lead, season pork chops or baby lamb chops with salt and black pepper. In a skillet, melt Kerrygold salted butter “and just a touch of olive so the butter doesn’t burn,” Parker says. While Parker left out the exact process, we’ll walk you through how to take it from here. Over medium-high heat in the skillet with the melted butter and a splash of olive oil, add four 3/4-inch thick bone-in center-cut pork chops or four 3/4-inch thick bone-in lamb chops. Cook for 3 1/2 to 4 minutes per side, or until an instant-read meat thermometer inserted into the center reads 140 degrees F. Transfer the protein from the skillet to a platter or cutting board and allow the meat to rest for 5 to 10 minutes (during which time the meat should reach the safe doneness temperature of 145 degrees F). The result is just “ahh, heaven,” Parker explains.
