Rotel Dip with Sausage

This Rotel dip with sausage is an amped-up version of the familiar Rotel and Velveeta dip, and only takes a couple of extra steps to make. Not only does adding sausage stretch the dip but it also takes it to another level of flavor. 3 ingredients is all you need. Serve with tortilla chips or anything you like for dipping.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 pound premium bulk sausage

  • 1 pound processed cheese food (such as Velveeta®), cubed

  • 1 (10 ounce) can diced tomatoes with green chilies (such as RO-TEL® Original), undrained

Directions

  1. Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, breaking up sausage with a spatula as it cooks, about 10 minutes. Drain sausage and return to the skillet.

  2. Add Velveeta® and RO-TEL®. Reduce heat to medium and cook until fully melted and combined, about 15 minutes, stirring every 5 minutes. For a thinner dip, add a splash of half and half in the last 5 minutes of cook time. Serve immediately.
