Fresh Peach Trifle

This trifle with peaches is one of my favorite desserts. Although it takes a little work, the results can be described with one word: yummy!

Ingredients

Original recipe (1X) yields 8 servings

  • 6 large ripe peaches - peeled, pitted, and sliced

  • 1 tablespoon fresh lemon juice

  • 2 (8 ounce) containers vanilla yogurt

  • 1 teaspoon lemon zest

  • 1 (10 inch) prepared angel food cake, cut into cubes

Directions

  1. Place peach slices into a large bowl and gently toss with lemon juice. Transfer 1 cup peaches to a blender and blend until smooth; set remaining peach slices aside.

  2. Stir puréed peaches, yogurt, and lemon zest together in a bowl until well blended.

  3. Layer 1/2 of the cake cubes in the bottom of a glass dish. Top with 1/2 of the peach slices, then 1/2 of the yogurt mixture, then all of the remaining cake cubes. Arrange the remaining peaches over top, reserving five or six slices for garnish. Cover with the remaining yogurt mixture, then arrange the reserved peach slices over top. Refrigerate until ready to serve.
