Ingredients

Original recipe (1X) yields 4 servings

  • 1 ½ pounds ground pork

  • 1 pound lean ground beef

  • ½ pound ground lamb

  • 1 egg white

  • 4 cloves garlic, minced

  • 2 teaspoons ground black pepper

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon cayenne pepper

  • ½ teaspoon paprika

  1. Gather all ingredients.

  2. Preheat an outdoor grill for medium heat and lightly oil the grate.

  3. Combine ground pork, ground beef, ground lamb, and egg white in a large bowl.

  4. Add garlic, black pepper, salt, baking soda, cayenne pepper, and paprika. Mix well using your hands; form into finger-length sausages about 3/4-inch thick.

  5. Cook sausages on the preheated grill, turning occasionally, until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
