How to make delicious flour-dusted zucchini pan-fried in butter, not oil. Easy to make too! You can even add a little bit of garlic powder and chili powder to spice things up a bit.

Ingredients

  • 2 eggs, beaten

  • 2 cups all-purpose flour

  • 2 large zucchini, cut into 1/2 inch slices

  • ¾ cup margarine

  • salt and pepper to taste

Directions

  1. Place beaten eggs in a bowl. Place flour on a dish. Dip zucchini in the eggs, then dredge in the flour to coat.

  2. Melt margarine in a large skillet over medium heat. Fry the coated zucchini slices in the margarine until lightly browned. Season with salt and pepper.
