Ingredients

Original recipe (1X) yields 12 servings

  • 3 cups water

  • 2 cups raisins

  • 1 cup unsweetened applesauce

  • ¾ cup vegetable oil

  • 2 large eggs

  • 3 tablespoons liquid sweetener

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1 ½ teaspoons ground cinnamon

  • 1 teaspoon baking soda

  • ½ teaspoon ground nutmeg

  • ½ teaspoon salt

  • 1 cup chopped walnuts

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch Bundt or tube pan.

  2. Combine water and raisins in a saucepan over medium heat. Simmer until water is absorbed; set aside to cool.

  3. Mix together applesauce, oil, eggs, liquid sweetener, and vanilla in a large bowl until well combined. Sift in flour, cinnamon, baking soda, nutmeg, and salt; stir until just combined. Mix in raisins and nuts. Pour batter into the prepared pan.

  4. Bake in the preheated oven until a toothpick inserted into the center of cake comes out clean, about 1 hour.
