This is a recipe for Amish meatloaf topped with bacon strips and a ketchup glaze that I had while in Amish country in Holmes County, Ohio.

Ingredients

Original recipe (1X) yields 8 servings

  • 2 pounds ground beef

  • 2 ½ cups crushed buttery round crackers

  • 1 ¾ cups ketchup, divided

  • 1 small onion, chopped

  • 3/4 cup brown sugar, divided

  • 2 eggs

  • 2 strips bacon

  • 2 tablespoons vinegar

  • 2 tablespoons prepared yellow mustard

  • ¾ teaspoon salt, or to taste

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Combine ground beef, crushed crackers, 3/4 cup ketchup, onion, 1/4 cup brown sugar, and eggs until well blended. Press into a 9x5-inch loaf pan; lay bacon over top.

  3. Bake in the preheated oven until cooked through, about 1 hour. While loaf bakes, whisk remaining 1 cup ketchup, remaining 1/2 cup brown sugar, vinegar, mustard, and salt together in a bowl; spread over top of meatloaf during last 15 minutes of baking.
