Mama's Famous Cheesy Mashed Potato Casserole

This is a favorite mashed potato casserole recipe handed down through the family. These cheesy mashed potatoes are the best you'll ever taste! Everyone is sure to love it. Mama usually just throws together whatever amounts she thinks taste good. But I did get her to give me a recipe with measurements.

Ingredients

Original recipe (1X) yields 10 servings

  • 5 pounds potatoes, peeled and cubed

  • 1 cup sour cream

  • ½ cup butter

  • ½ cup grated Parmesan cheese

  • 6 ounces cream cheese, softened

  • 4 ounces extra-sharp Cheddar cheese, shredded

  • 4 stalks green onions, chopped

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

Directions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.

  2. While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).

  3. Drain potatoes and return to the pot. Mash while hot. Add sour cream, butter, Parmesan cheese, cream cheese, Cheddar cheese, green onions, salt, and pepper; beat until well blended. Transfer to a 3-quart casserole.

  4. Bake in the preheated oven for 45 minutes. Serve piping hot.

Cook's Notes:

You make this casserole in advance, cover, and put in the fridge for up to 3 days. Take out 1 hour before baking.

You can either bake it in the oven or stick it in a slow cooker on Low for 5 to 8 hours or on High for 3 to 5 hours. This recipe is best served piping hot!
