Citrus-Flavored Bean Chili with Papaya

Most people don't want chili in the hot, hot summer, but this chili is so good, you just might change your mind! Papayas and orange make a tasty addition to this yummy chili.

Ingredients

Original recipe (1X) yields 4 servings

  • 1 (15 ounce) can black beans, rinsed and drained

  • 1 (15 ounce) can pinto beans, rinsed and drained

  • 1 cup chopped ripe papaya

  • ¾ cup water

  • ¾ cup chopped red onion, divided

  • ¼ cup orange juice

  • ¼ cup chopped green onions

  • 1 (4 ounce) can chopped green chilies

  • 2 tablespoons hot salsa

  • 2 tablespoons Cajun seasoning, or more to taste

  • 2 tablespoons Italian seasoning

  • 1 tablespoon garlic powder

  • 1 teaspoon grated orange zest, or to taste

  • 1 medium avocado, chopped

  • 2 tablespoons chopped fresh cilantro

Directions

  1. Combine black beans, pinto beans, papaya, water, 1/2 cup red onion, orange juice, green onions, green chiles, salsa, Cajun seasoning, Italian seasoning, garlic powder, and orange zest in a pot over medium heat; heat to almost boiling. Reduce heat and simmer for 10 to 15 minutes.

  2. Gently toss remaining 1/4 cup red onion, avocado, and cilantro in a bowl; don't mash the avocado.

  3. Ladle chili into 4 bowls and sprinkle with mixed topping.
