Original recipe (1X) yields 4 servings 1 (15 ounce) can black beans, rinsed and drained 1 (15 ounce) can pinto beans, rinsed and drained 1 cup chopped ripe papaya ¾ cup water ¾ cup chopped red onion, divided ¼ cup orange juice ¼ cup chopped green onions 1 (4 ounce) can chopped green chilies 2 tablespoons hot salsa 2 tablespoons Cajun seasoning, or more to taste 2 tablespoons Italian seasoning 1 tablespoon garlic powder 1 teaspoon grated orange zest, or to taste 1 medium avocado, chopped 2 tablespoons chopped fresh cilantro Directions Combine black beans, pinto beans, papaya, water, 1/2 cup red onion, orange juice, green onions, green chiles, salsa, Cajun seasoning, Italian seasoning, garlic powder, and orange zest in a pot over medium heat; heat to almost boiling.
