Original recipe (1X) yields 4 servings 2 tablespoons extra-virgin olive oil 2 medium onions, finely sliced 3 cloves garlic, finely sliced 1 small potato, peeled and diced 1 medium green bell pepper, thinly sliced 1 medium red bell pepper, thinly sliced 2 medium zucchini, sliced 4 medium tomatoes, peeled and chopped 1 teaspoon white sugar, or to taste salt and freshly ground black pepper to taste Directions Heat oil in a frying pan over medium heat. Add onions and garlic and cook, stirring occasionally, for 3 minutes. Add potato and bell peppers, increase heat to medium-high, and cook, stirring occasionally, for 5 minutes.
