Pineapple Lemonade

This lemonade, made with fresh pineapple, is tropical and refreshing. I find that in-season pineapples tend to be very sweet, so little or no sweetener is needed. Adjust to taste.

Ingredients

Original recipe (1X) yields 6 servings

  • 1 fresh pineapple

  • 4 cups water, divided

  • ½ cup freshly squeezed lemon juice

  • 1 packet sweetener of your choice, or to taste

  • 2 cups ice cubes

Directions

  1. Core pineapple using a pineapple corer or slicer. Cut into chunks and measure out 2 cups. Reserve any pineapple juice.

  2. Combine 2 cups pineapple chunks, reserved pineapple juice, 2 cups water, and lemon juice in a blender. Blend until smooth and pour into a pitcher.

  3. Add remaining 2 cups water and sweetener to the pitcher. Stir and serve over ice.
