Ingredients

  • cooking spray

  • 2 cups heavy cream

  • 1/4 cup unsalted butter

  • 2 cloves garlic, minced

  • 1 tablespoon chopped fresh parsley, or more to taste

  • 1 tablespoon fresh thyme leaves, or more to taste

  • 1 tablespoon minced fresh sage, or more to taste

  • 1 tablespoon minced fresh rosemary, or more to taste

  • 1 ½ teaspoons sea salt

  • ¾ teaspoon ground black pepper

  • 3 pounds sweet potatoes, peeled and thinly sliced

  • 1 ½ cups shredded Gruyère cheese

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Coat a baking dish with cooking spray.

  2. Combine cream, butter, and garlic in a saucepan; bring to a simmer. Remove from heat; stir in parsley, thyme, sage, rosemary, salt, and black pepper.

  3. Arrange 1/2 sweet potato slices in the prepared baking dish; cover with 1/2 Gruyère cheese. Pour cream mixture on top. Arrange remaining 1/2 sweet potato slices over cream; sprinkle remaining 1/2 cheese on top.

  4. Bake in the preheated oven until golden brown and bubbly, about 30 minutes.
