These coconut curry chicken balls are bite-sized sweet and spicy appetizers. They are great at parties and gatherings. They never last long and everyone wants the recipe. They also look really special, great for Christmas gatherings since they look a lot like snowballs.

Ingredients

Original recipe (1X) yields 16 servings

  • 2 cups chopped cooked chicken

  • 1 (8 ounce) package cream cheese

  • ½ cup chopped almonds

  • 4 tablespoons mayonnaise

  • 3 tablespoons mango chutney

  • 2 teaspoons curry powder

  • 1 teaspoon salt

  • 1 cup unsweetened grated coconut

Directions

  1. Combine chicken, cream cheese, almonds, mayonnaise, mango chutney, curry powder, and salt in a large bowl. Mix well.

  2. Roll 1 tablespoon of the mixture into a ball. Repeat with the remaining mixture. Roll each ball in grated coconut to coat.

Cook's Note:

Substitute chopped almonds for the grated coconut if desired.
