Recipes Side Dish Sauces and Condiments Marinade Recipes Beef Tri-Tip Marinade 4.5 (4) 4 Reviews 2 Photos I came up with this brown sugar and Merlot tri-tip marinade by chance when I went to pour some Worcestershire and found I was nearly out. It also works great on beef kebabs. This marinade makes enough for a 2 1/2-pound tri-tip steak. Original recipe (1X) yields 10 servings 3 tablespoons brown sugar 1 tablespoon garlic powder 1 tablespoon ground black pepper 2 teaspoons onion powder 1 cup Merlot wine ½ cup water ¼ cup Worcestershire sauce 1 tablespoon soy sauce 3 large cloves garlic, minced, or more to taste ½ teaspoon liquid smoke flavoring Directions Combine brown sugar, garlic powder, pepper, and onion powder in a medium bowl. Stir in wine, water, Worcestershire sauce, soy sauce, garlic, and liquid smoke until combined. Tips Use any dry red wine you prefer. How to Use: Place a 2 1/2-pound tri-tip steak in a glass baking dish. Pour marinade over top and turn steak several times to coat. Cover with plastic wrap and marinate in the refrigerator, 8 hours to overnight. When ready to cook, remove steak from the marinade and shake off excess. Discard any remaining marinade. Roast steak in a baking dish in an oven preheated to 425 degrees F (220 degrees C) oven until nicely browned on the outside and reddish-pink and juicy in the center, about 45 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium-rare.
