Microwave Squash

I like to microwave butternut squash, acorn squash, or any winter squash with this quick and easy recipe. It's a super simple method my dad taught me for college. When the squash is tender, you can scoop out the flesh or serve in shells.

Ingredients

Original recipe (1X) yields 4 servings

  • 1 butternut or buttercup squash, halved and seeded

  • 4 tablespoons maple syrup, or to taste

  • 1 tablespoon butter

Directions

  1. Place squash cut-side up on a microwave-safe serving dish. Spread butter into the hollow of each half; spoon 2 tablespoons maple syrup into each half. Microwave until fork-tender, 10 to 15 minutes.

Cook’s Note

You can add 1 teaspoon of brown sugar in each half instead of syrup.
