Original recipe (1X) yields 24 servings oil for frying 1 (8 ounce) can crushed pineapple in juice, drained and juice reserved 1 cup self-rising flour ½ cup milk 1 egg 2 cups white sugar 2 tablespoons confectioners' sugar for dusting, or as needed (Optional) Directions Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Whisk pineapple, flour, milk, and egg together to form a light and fluffy batter. Bring reserved pineapple juice to a boil in a small saucepan. Add white sugar and stir to dissolve; lower heat.
