This homemade turkey soup recipe comes from a number of years of playing in the kitchen. I find that the addition of beef stock to the recipe adds depth to a usually bland soup. Any type of pasta can be used.

Ingredients

Original recipe (1X) yields 6 servings

  • 1 tablespoon olive oil

  • 1 ½ cups diced celery

  • 1 ½ cups diced carrots

  • 1 cup diced onion

  • 1 tablespoon dried parsley

  • 1 bay leaf

  • 3 cups beef stock

  • 3 cups chicken stock

  • 2 cups roasted white turkey meat

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • ¾ cup rotini pasta

Directions

  1. Heat oil in a large pot over medium heat. Add celery, carrots, onion, parsley, and bay leaf; cook until vegetables are tender, about 10 minutes. Add beef stock, chicken stock, turkey, salt, and black pepper; bring to a boil. Reduce heat, cover pot, and simmer until soup is heated through, about 15 minutes.

  2. Stir rotini into soup; cook until pasta is tender yet firm to the bite, about 15 minutes.
