Meatloaf for Tomato Haters

I created this recipe for meatloaf without ketchup because I needed a meatloaf that contained no tomatoes or tomato sauce. I added a hint of hot sauce to avoid blandness. Serve with mashed potatoes and veggies.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 cup diced onion

  • 1 cup diced green bell pepper

  • ¾ cup Italian-style bread crumbs

  • ¼ cup hot pepper sauce

  • 1 large egg

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 2 pounds ground beef

  • 1 (.75 ounce) packet dry brown gravy mix

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Mix onion, bell pepper, bread crumbs, hot pepper sauce, egg, salt, and pepper together in a large bowl. Add ground beef and mix until well combined. Press into a loaf pan and sprinkle gravy mix over top.

  3. Bake in the preheated oven until browned on the outside and no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven and let rest for 10 minutes before serving.
