Cucumbers add crunch to this simple, easy potato salad with dill. I have tried other vinegars, but I find that I prefer it with apple cider vinegar.

Ingredients

Original recipe (1X) yields 5 servings

  • 1 pound red potatoes, cut into 3/4-inch cubes

  • ¼ cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 2 sprigs fresh dill, or to taste, chopped

  • salt and ground black pepper to taste

  • 4 green onions, sliced

  • ½ cucumber, peeled, seeded, and finely chopped

Directions

  1. Place potatoes in a large pot and cover with salted water; bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 12 minutes. Drain; steam dry while preparing dressing.

  2. Whisk mayonnaise, apple cider vinegar, dill, salt, and black pepper together in a large bowl; stir in green onions and cucumber.

  3. Add warm potatoes to dressing; toss gently to coat. Cover bowl; refrigerate for at least 2 hours before serving.
