Original recipe (1X) yields 8 servings 1 tablespoon olive oil 1 ½ cups chopped onion, divided ½ cup green onions, chopped 1 clove garlic, chopped 1 (12 ounce) package dry black beans, soaked overnight 2 smoked ham hocks 8 ounces diced ham ½ pound thickly sliced bacon, diced 2 bay leaves, crushed ⅛ teaspoon ground coriander salt and pepper to taste ½ cup chopped fresh cilantro (Optional) ¼ cup chopped fresh parsley (Optional) Directions Gather all ingredients. Bring to a boil, then reduce heat to medium-low, and simmer uncovered for 2 hours, or until tender. Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Dotdash Meredith Food Studios Place ham, bacon, and remaining onion in a baking dish. Bake until mixture is crispy, 15 minutes.
