Ingredients

Original recipe (1X) yields 5 servings

  • 2 sweet potatoes, peeled and cubed

  • ¼ cup butter

  • ½ cup packed brown sugar

  • ¼ cup orange juice

Directions

  1. Boil cut-up sweet potatoes until tender, about 10 minutes.

  2. Melt butter and brown sugar together in a frying pan until bubbly. Add orange juice and stir until smooth. Add the sweet potatoes and cook slowly, turning occasionally until caramelized, about 20 minutes.

Recipe Tips

If the syrup is too thin, you can add a bit more brown sugar.

You can also bake the sweet potatoes at 350 degrees F (175 degrees C) until fork-tender.
