After trying the dish, he said, “Those potatoes are pretty special,” and then asked for another serving. Original recipe (1X) yields 4 servings 1 (14.5 ounce) can low sodium chicken broth 1 pound frozen riced cauliflower 1/4 teaspoon ground black pepper 1 tablespoon unsalted butter 1 tablespoon cream cheese 1 tablespoon snipped fresh chives, plus more for garnish Directions In a 2-quart saucepan, bring chicken broth to a boil over medium high heat. Add frozen riced cauliflower and ground black pepper. Use a spoon to break up the pieces and separate the cauliflower “grains”. Return to a boil and cook, uncovered, about 5 minutes. Using a mesh sieve, drain the cauliflower well and transfer to a blender. Add butter and cream cheese. Pulse several times, and then purée for about 1 minute. Stir in chives and place in a serving bowl. Garnish with additional chives, if desired. Serve warm. Cook’s Note Be sure to check while blending for desired texture. A full minute will yield a smooth purée. If you prefer more texture, blend for less time.
