This mango pico de gallo is a colorful, lively fruit salsa that enhances grilled or seared fish, chicken, or shrimp. In Spanish, “pico de gallo” means “beak of the rooster”, and it is indeed spicy. For extra heat, use more jalapeños, or substitute serrano peppers, if you dare.

Ingredients

Original recipe (1X) yields 4 servings

  • 1 1/2 cups diced fresh mango

  • 1/3 cup minced red onion

  • 1/3 cup minced jalapeno pepper, or to taste

  • 1/3 cup diced tomato

  • 1/3 cup minced cilantro

  • 1 lime, zested and juiced

  • 1 pinch salt, or to taste

  • lime slices and cilantro sprigs for garnish (optional)

Directions

  1. Place mango, red onion, jalapeño, tomato, cilantro, and lime zest and juice in a medium bowl. Season to taste with salt. Toss to combine.

  2. Refrigerate at least 30 minutes to an hour. Garnish with additional lime slices and cilantro sprigs. Serve cold.
