Katie Couric’s 3-Ingredient Sandwich Is the Savory Combo Perfect for Any Meal

Katie Couric’s cooking videos have very quickly become some of our favorite celebrity recipe videos on the internet. Sure, she’s no Stanley Tucci, but Couric’s calming voice and (slightly strange) combos make her recipes that much more fun to watch and recreate.

Last summer, Couric’s three-ingredient tomato sandwich became an internet sensation thanks to the journalist’s strong opinions on her choice of bread (Pepperidge Farm Country-Style White Bread) and mayo (Hellmann’s). After the tomato sandwich success, Couric decided to drop a different kind of three-ingredient sandwich recipe this summer—one that’s all about the savory, if a little unconventional.

“Since you so enjoyed my tomato sandwich…I’m going to show you a new sandwich combo that I’ve always loved that you’re going to think is really weird, but don’t knock it ‘til you’ve tried it,” Couric says in a video shared on her media company’s Instagram.

She goes on to spread peanut butter on toasted sourdough bread and top the sandwich with two slices of crispy bacon

“It’s a peanut butter and bacon sandwich. Now, you can also put a little mayo on this if you need it and want it to have a little tang,” she says with a laugh. “It’s so good.”

Now, I know some celebs that love their peanut butter sandwiches (cough, cough, the Tucc), but I’ve never thought of adding salty, savory bacon to a PB sandwich—since, normally, you’d add something sweet. But Couric said don’t knock it ‘til you try it, so I did.

Similar to her tomato sandwich, this peanut butter and bacon sandwich is really easy to make—and I’m a sucker for simplicity. Truthfully, I had high hopes going into this combo. I love peanut butter toast and bacon separately, so together, they have to be great, right? Well.

Somehow, this sandwich is lacking in flavor. Sure, it tastes like a peanut butter and bacon sandwich, but there’s nothing super special about it. Unlike other bacon sandwiches—like a BLT or bacon, egg, and cheese—the flavors don’t really meld together to create anything new. Instead, it’s just an incredibly savory sandwich that feels like it needs something else. Maybe I should have added the mayo to it—but, in reality, I felt like I wanted a sweet element, like a dollop of Nutella or even just classic jelly.

I ended up reverting to my old ways and eating the two separately, but I could see myself experimenting with this recipe again to try to find that perfect peanut butter, bacon, and something else combo—like bananas perhaps, à la Elvis.
