Ingredients

Original recipe (1X) yields 6 servings

  • 2 1/2 cups whole milk

  • 1 cup yellow cornmeal

  • 2 tablespoons unsalted butter

  • 3/4 teaspoon salt

  • 3/4 teaspoon freshly ground black pepper

  • 1 cup frozen whole-kernel corn

  • 1/2 cup chopped green onions, plus more for garnish

  • 2 teaspoons baking powder

  • 2 large eggs, lightly beaten

  • sour cream, for serving

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly coat a 2-quart baking dish with cooking spray.

  2. Stir together milk, cornmeal, butter, salt, and pepper in a saucepan over medium-high heat. Bring to a boil, stirring constantly, until mixture reaches the consistency of mashed potatoes, about 5 minutes. Remove from heat. Stir in corn, green onions, and baking powder. Stir in eggs. Transfer batter to the prepared dish.

  3. Bake in the preheated oven until risen and set, about 35 minutes. Serve with sour cream and additional green onions.
