Ingredients

Original recipe (1X) yields 2 servings

  • 12 ounces whole wheat pasta (e.g. farfalle pasta)

  • 2 cooked chicken breasts, cut into bite-sized pieces

  • 1 (6-ounce) jar sun-dried tomatoes, drained and chopped

  • 1/3 cup chopped or julienned fresh basil (loosely-packed)

  • optional toppings: crushed red pepper flakes, toasted pine nuts

Sauce:

  • 1 tablespoon butter or olive oil

  • 5 cloves garlic, minced

  • 2 cups Almond Breeze Unsweetened Original Almondmilk or Almond Breeze Extra Creamy Almondmilk

  • 3 tablespoons all-purpose flour

  • 1/2 cup freshly-grated Parmesan cheese, plus more for topping

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Directions

  1. Bring a large pot of generously salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite according to package instructions, 9 to 12 minutes. Drain and set pasta aside.

  2. Meanwhile for the sauce, heat olive oil (or butter) in a large saute pan over medium-high heat. Add garlic and saute, stirring occasionally, until fragrant, 1 to 2 minutes. Stir in flour, and saute for an additional minute, stirring occasionally.

  3. Slowly add in Almond Breeze Unsweetened Original Almondmilk or Almond Breeze Extra Creamy Almondmilk, whisking to combine until smooth. Continue cooking until mixture comes to a simmer and starts to thicken. Stir in Parmesan cheese, salt, and pepper. Cook and stir until cheese is melted. Keep sauce on low until pasta has finished cooking.

  4. Once the sauce and pasta are cooked, toss them together with chopped chicken breasts, sun-dried tomatoes and half of the fresh basil until evenly combined. Serve immediately, garnished with remaining fresh basil. Top with more Parmesan cheese, toasted pine nuts, and red pepper flakes, if desired.
