Copycat Chipotle Rice

This copycat Chipotle rice, with lemon, lime, and cilantro, is easy to make at home, and tastes just like the restaurant version.

Ingredients

Original recipe (1X) yields 6 servings

  • 1 tablespoon olive oil

  • 1 1/2 cups white rice

  • 1 teaspoon kosher salt

  • 3 cups water

  • 1 bay leaf

  • 1 tablespoon fresh lime juice

  • 1 1/2 teaspoons fresh lemon juice

  • 2 tablespoons finely chopped cilantro

Directions

  1. Heat oil in a medium saucepan over medium high heat. Add rice and salt and cook, stirring constantly, about 1 minute. 

  2. Add water and bay leaf and stir once. Bring to a boil, cover, and reduce heat to a low simmer.  Continue cooking until liquid is absorbed and rice is tender, about 15 minutes.  Remove from heat and fluff with a fork. Add lemon juice, lime juice and cilantro and stir with a fork until combined.
