I made it per the recipe, except I used yellow hominy. My husband thought it was acceptable, but I LOVED it. I plan on making it again. Oh yeah, I mixed a little cheese inside as well as on top. We love yellow hominy drained & pan seared with butter, s/p, onion/garlic.Also by draining cans & patting kernels dry, putting of a sheet pan, seasoning & toasting it into homebaked crunchy corn nuts on the low & slow.So this will be a new way to love on some corn. Add or subtract ingredients in according to your own taste; I like a little cheese mixed in with the hominy as well as on top. May 2024 A keeper! Crowd-pleaser This was so yummy. I took the easy route. Used at 38oz can of hominy, a small can of diced green chilis, and a big scoop of jar garlic. Boiled for 20 minutes, drained, then added 1.5 T butter, about a half cup of sour cream, and some sharp cheddar (a little mixed in and then some on top) and baked for 20 minutes. It tasted like funeral potatoes but better. No leftovers. Next time will make a double batch. Also added 8 oz can of whole kernel corn and salt and black pepper to taste. Served in a bowl with crumbled UNSWEETENED cornbread mixed in. We southerners gotta have our cornbread. Very good. Helpful (3) Healthier Stuffed Peppers 07/29/2012 We love stuffed peppers, but we don't love the heartburn most stuffed peppers cause. Fixed these for lunch today as per recipe, except we drained the browned meat and washed the excess grease off under hot running water. Then we placed the seeded peppers (green only) in boiling water for 5 minutes to soften them. They were awesome, with no need for the Tums. Thank you for this great recipe! Helpful (88) Mexican Pizza 04/22/2012 Made this after church today almost exactly like the recipe. The only changes made were that we used 96% fat-free tortillas, low-fat Mexican blend cheese, fat-free refried beans, and low-fat sour cream. I also added a 7.5 oz can of sliced mushrooms. It was awesome!! You couldn't tell it was diet. Will certainly be making this again soon. Helpful (3) Unbelievable Chicken 03/10/2012 Great recipe, and I'm usually not that fond of chicken breasts. Used jalapeno mustard and halved the sugar and oil. I placed meat in a zip-lock with the marinade and put in the ice chest to take camping. Grilled the next day over charcoal for chicken burgers.
