Softened the potatoes quickly, but they still got nicely caramelized and the cumin was a unique addition that I wouldn't normally have considered. Had 4 potatoes so we cooked them for the full 30 minutes in an uncovered foil pan. This was a delicious way to fix sweet potatoes! Cook time needs to be closer to 20 minutes rather than 30. I used canned mushroom because that's what I had and I didn't miss the fresh. My son is allergic to milk so I used coconut milk (the canned stuff not the drink) I was worried it would taste coconuts but it didn't. This is a keeper! Helpful (0) Blueberry Scones 12/25/2014 Made these for Christmas morning breakfast. I used almond milk and butter substitute because my son has a milk allergy. They turned out great! I typically like my scones a little more dry than these but they are still really good. I also used frozen wild blueberries. I did read the directions wrong and only made one round cut into sixths but they still baked up great with only 5 extra minutes. Next time I'll make the correct size and amount and maybe they will be more the consistency I prefer. Helpful (0) Smothered Green Beans 03/31/2013 This is pretty much the tried and true southern way to make green beans. If you like your beans with some bite to them you won't like these. I love them and its my go to way to fix green beans if not in a hurry. Don't use canned beans! The result will not be near as good, if you don't have fresh frozen is the better alturnative. Helpful (2) Dutch Babies 11/12/2011 I have made these before but never taken the time to review. These are so good. I've never had trouble with them rising. This time I used my cast iron skillet, and warmed eggs and milk. It did get fluffier than in the past. I also added vanilla just because I love it. The thing to remember is they will deflate some when you cut into them and be more pancake like in places still so good! I topped with homemade apple butter and powedered sugar. Helpful (9) Chicken Tortilla Soup with Salsa 10/18/2011 This was very good I used Rotel tomatoes instead of salsa because that is what I had. Also, like others I poached the chicken and shredded first. I also added a bit of cream because I had some I needed to use up and I like a creamy Tortilla soup. Helpful (1) Rachel's Tomato Basil Soup 09/28/2011 Really good and my 4 year old loved it. I used spicy V8 & dried basil because that is what I had. Will definatly make again. Only gave 4 stars because it had a bit more cream than I would have liked. Helpful (1) recipe collections 1 All Saved Recipes 118 Recipes
