I then added whole corn (didn't have creamed style) about 1/2 cup, some fresh jalapenos and shredded cheese that has taco seasoning. Super easy. Super cheap. Super yummy. Helpful (4) Easy Chicken Enchiladas 10/08/2012 Loved how easy this was to pull together. I subbed black beans for the pinto because I didn't have any pinto beans. I also added a small can of corn in order to stretch this into more enchiladas. For the chicken, I used canned chicken breast. I followed past reviewers who suggested using only 1/2 the cream cheese. I also opted for lite cream cheese to cut back on some calories. Added about 1 tablespoon of taco seasoning mix to give it a little more flavor. In order to Spice it up even more I added Hot jalapeno chilis diced. I did NOT use flour tortillas ONLY because authentic enchiladas use CORN not FLOUR. I did include some enchilada sauce as well. I didn't want them to dry out. Overall very easy and tasty. EXCELLENT dish to make ahead of time and Freeze and then pop in the oven whilst still frozen. Thanks IANKRIS !! Helpful (1) Chicken Tortilla Soup with Salsa 09/28/2012 I made some adjustments based on what I had in the house. I doubled the recipe and in addition to the corn, I added a can of hominy and a can of black beans. I used a low sodium packet of taco seasonings so I didn't have to fuss measuring spices out. I didn't have any salsa so I added 1 cup of bloody mary mix and diluted that with 1 cup of water. Gave it a nice kick. I poached my chicken breasts in water instead of adding them to the onions and oil. Cubed the chicken after it was cooked and added it to the soup. Served with green onions, avocado slices , sour cream, cheese and tortilla strips. Thanks Betty !! Helpful (0) Progresso® Creamy Chicken Piccata 09/25/2012 I made this with Perdue short cuts to save on time. Obviously, didn't flour the chicken. Added a bit more lemon juice than was called for and served over rice instead of pasta. Since I omitted the flour the sauce was a bit more watered down then I wanted but once it was poured over the rice it was fine. Will definately make again. This time I will dredge the chicken breasts in flour and follow the recipe more closely. Overall the flavor was very good and super fast and easy to make.
