I didn't have fresh tomatoes on hand, but I did have a 15oz can of peeled, diced tomatoes and an 8oz can of tomato sauce. So I used both of those in place of the fresh tomatoes, and mashed them up with a potato masher while it was cooking. I added four cloves of garlic, and a dash of garlic powder as well, since we are garlic lovers. Great recipe, thanks for sharing. I let it set on the counter about 15 minutes and tried one. It was very golden brown after just 2 minutes. I let it cook until it was almost too done because I knew the middle would be cold and it was. I’m glad I only tried one. I’m baking the next one. I made it a 2nd time, doubled the recipe and used egg roll wraps, and it was Amazing!! If you want them to taste like Chili's, use the egg roll wraps/skins. I have also made this as a "Pina Colada" cake, removing the nuts and adding pineapple and coconut to the cake, substituting pineapple juice for the water in the glaze. I made this rum cake exactly per the given recipe except one ingredient. It turned out great. We had golden rum instead of dark rum but it still worked out fine. The amount of glaze was perfect as the cake was not dripping wet as all the glaze soaked into the cake with no excess. This cake took between 50-55 minutes to bake. Everyone loved it. Also, I used the tip to pour half the glaze into the bundt pan after removing the cake, placed the cake back into the pan, and then poured the other half of the glaze on the bottom of the cake, and then turned out onto the cake plate.
