The only thing I would mention is that the recipe says it yields 10-12 waffles, but it only made 5 for me. My waffle iron makes waffles that are about 8 inches in diameter. December 2023 I made this for Friendsgiving. I made exactly as the recipe says except I left out the extra .25 cup of white sugar and halved the brown sugar. We didn't miss the extra sugar at all! I had originally planned to add a maple glaze, but the night got away from me and turns out we didn't feel like they needed it!I made cupcakes. They baked in about 20 min and as I was making the batter I accidentally forgot to add the pecans...so topped my cupcakes with them. This was a fantastic mistake, the pecans toasted in the oven and it gave this great crunch to the top. I will make again. Everyone liked them! It was a good balance of sweet and sour and was perfectly moist. I followed some of the other reviewers suggestions and only made half of the sauce. Thanks so much for the recipe! With that being said, I do typically use bell pepper in place of the carrot but that is just a personal preference. For the shredded cheese I recommend a sharp cheddar. My favorite is Sargento's 4 state cheddar mix. Having a few different kinds of cheese in there kind of adds something, but I have made it with one kind as well. Definitely give this recipe a try! I followed the recipe exactly and added a streusel of brown sugar, white sugar, cinnamon, cardamom, and pecans on top. If I had had fresh berries I wouldn't have bothered with a streusel, but since I didn't I wanted to add a little something. Enjoy! I noticed my balsamic vinegar was a little sweeter than I've had in the past so I added a little apple cider vinegar for more acid. I topped my salad with roasted pistachios and aged parmesan cheese.
