I do use more cheese (some aged Gouda US nice with the sharp cheddar) and my secret ingredients: mustard powder and a touch of hot sauce in the cheese sauce. Glad I found this version to riff off of. A great basic recipe for “dressing up” with inclusions (I did maple walnut and dried blueberries) and adapts nicely to 1/3 whole wheat/spelt flour. I had a frozen pie crust that needed using, but of course no top for it. Great simple recipe. I added a little cornstarch and orange zest, plus some Penzey’s pie spice in the topping (made w/pecans and butter). I halved the recipe and didn't even make a mess in the microwave. Try coconut sugar for a little more depth of flavor. ?? Helpful (0) Cranberry Orange Bread 02/06/2017 Very nice recipe -- one I'll return to a lot (we have a lotta local cranberries here in Oregon too). I used whole spelt and emmer flour cuz that's what I had on hand. Same with coconut oil instead of butter -- I cut it in as if making pastry and that seemed to work just fine (tho I had to add a splash of milk too loosen up the batter -- will melt it next time I think). Happened to have a bunch of nice oranges, too, so I squeezed the juice fresh (!) and probably doubled the zest out of enthusiasm alone. ;-) Its a great breakfast!
