Berry-Mango Shaved Ice

Shaved ice is topped with homemade berry and mango syrups for a refreshing summer treat. Use any seasonal fruit to blend your own syrups and let everyone customize their own serving of shaved ice. To make plain paper cones pop, wrap them with decorative paper, then secure with tape or a dot of glue.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 cup water

  • 1 cup sugar

  • 1/4 teaspoon salt

  • 1/3 cup chopped fresh strawberries

  • 1/3 cup fresh blackberries

  • 1/3 cup chopped fresh mango

  • ice as needed

Directions

  1. Whisk together water, sugar, and salt in a bowl until sugar is dissolved.

     

    Blend strawberries and 2/3 cup of the sugar mixture in a blender or small food processor until smooth. Strain mixture through a fine-mesh sieve; discard solids. Repeat blending and straining with remaining sugar mixture, blackberries, and mango to make 3 fruit syrups.

  2. Shave ice in a shaved ice machine according to manufacturer’s directions. Scoop shaved ice into cones, cups, or bowls and drizzle with
    fruit syrups.

    Cook's Notes:

    If you don't have a shaved ice machine, process ice cubes in a food processor until cubes break down.

    For a boozy version, add 1 ounce vodka to fruit syrups after blending.
