Air-Fryer Roasted Broccoli with Cheese Sauce

Ingredients

Original recipe (1X) yields 4 servings

  • 6 cups broccoli florets

  • 10 tablespoons low-fat evaporated milk

  • 5 tablespoons queso fresco, crumbled

  • 4 teaspoons aji amarillo paste or other hot pepper paste

  • 6 lower-sodium saltine crackers

Directions

  1. Preheat an air fryer to 375 degrees F (190 degrees C).

  2. Coat broccoli florets with cooking spray. Put half of the florets in thefryer basket. Cook until crisp-tender, 6 to 8 minutes. Repeat with remaining broccoli.

  3. Meanwhile, add evaporated milk, queso fresco, aji amarillo paste, and saltines to a blender; process until smooth, about 45 seconds. Pour sauce into a bowl. Microwave until warm, about 30 seconds. Serve with broccoli.
