Kochi (also known as passover cake in English) is a Malaysiandumpling (kuih) made from ground unpolished glutinous rice. For the Eurasians in Brunei, Malaysia and Singapore, this snack is often sold at funerals. The black colour of the unpolished rice symbolises death, while the sweet filling represents resurrection.
Kochi ([koˈtʃːi ]), also known as Cochin (KO-chin), is a major port city on the south-west coast of India by the Arabian Sea and is part of the district of Ernakulam in the state of Kerala. It is often called Ernakulam, which refers to the mainland part of the city. With a total metropolitan population of 2.1 million. Known as the Queen of the Arabian Sea, Kochi was an important spice trading centre on the west coast of India from the 14th century. Occupied by the Portuguese in 1503, Kochi was the first of the European colonies in colonial India. It remained the main seat of Portuguese India until 1530, when Goa was chosen instead. The city was later occupied by the Dutch and the British, with the Kingdom of Cochin becoming a princely state. Kochi ranks first in the total number of international and domestic tourist arrivals in Kerala. Kochi has been ranked the sixth best tourist destination in India according to a survey conducted by the Nielsen Company on behalf of the Outlook Traveller magazine. Kochi was one of the 28 Indian cities found to be among the emerging 440 global cities that will contribute 50% of the world GDP by the year 2025, in a 2011 study done by the McKinsey Global Institute.

Jadi, bila nak buat kuih lain, dah senang dah sebab tak perlu buat inti kelapa lagi. Kalau nak buat sikit untuk adunan ni saja, cukup sekadar guna 1 cawan kelapa parut sahaja. Santan juga boleh disimpan beberapa hari di dalam peti ais kalau nak buat kuih koci ni lagi. Pastikan beras pulut hitam dikisar betul-betul halus supaya kuih koci tak terasa berbiji-biji. Daun pisang perlu dilayur di atas api sebelum digunakan supaya daun menjadi lembut dan mudah untuk membungkus kuih koci. Potong sedikit melengkung dihujung daun pisang untuk memudahkan pembungkusan kuih ni. Pastikan kuih koci dibungkus semasa panas supaya daun pisang menjadi sedikit layu dan memberikan aroma kepada kuih koci. 1 adunan ni boleh dapat lebih kurang 22 biji kuih bergantung pada saiz yang kita buat. 4. Kemudian ambil 1 doh kecil dan lipatkan kemas seperti yang ditunjukan di dalam video.
5. Kemudian apabila pengukus sudah panas, kukus kuih koci ini selama 30minit atau sehingga masak.
Hasilnya kuih koci yang sangat sedap, teksturnya kenyal di luar dan inti yang lembut di dalam.

Black Pulut Koci Cake Recipe
Ingredients:
Coconut Core Division
2 cups grated coconut
1/2 cup brown sugar water
2 tablespoons sugar
1 tablespoon wheat flour
Cake body ingredients
2 cups glutinous flour
2 tablespoons wheat flour
1/2 cup fine glutinous rice (can grind black glutinous rice and sieve)
1/4 cup coconut milk
1 cup of water (enough water)
a little bit of salt
melted banana leaves
Ways:
Coconut Core Division
Put grated coconut, brown sugar water and sugar in a pot. Stir well and cook over medium heat. Then when well blended, add the wheat flour and stir well. Turn off the heat and let it cool.
The body part of the cake
1. Put all the ingredients in a bowl or container. Knead the dough until it becomes a dough. Add water little by little until the dough does not stick to the hands and form a dough. (approximately 1 cup).
2.Then take a little dough, fill it with a little grated coconut core cooked earlier. Close neat and round shape.
3. Prepare the melted banana leaves, take a little cooking oil and apply on the surface of the leaves.
4. Then take 1 small dough and fold it neatly as shown in the video.
5. Then when the steamer is hot, steam this koci cake for 30 minutes or until cooked through.
The result is a very tasty koci cake, chewy texture on the outside and soft core on the inside.

There are many variations of kuih koci. In this recipe, I am going to share the version which is made from black glutinous rice flour or in the Malay language, it is known as “tepung pulut hitam”. “Tepung pulut” means glutinous rice flour while “hitam” refers to the colour black. Personally, I enjoy eating black glutinous rice kuih koci as I love everything that is made from black glutinous rice. Yes, I am a huge fan of the [Black Glutinous Rice Dessert](/recipes/pulut-hitam). It must be due to the chewy texture which helps to contain the taste as I savour it. In this case, it’s the flavours of the toffee sweetness that comes from a very special palm sugar, gula melaka and the coconut.
A substitute for grated coconut is desiccated coconut. Since desiccated coconut is not at all moist, quite a bit of water is needed to ensure it softens and soaks up the flavour of the palm sugar.
If black glutinous rice flour is not available, white glutinous rice flour may be used. Optionally, add some pandan aroma or flavouring to the dough. This would give the familiar wonderful fragrant that belongs to most Malaysian kuih. ‘Kuih Koci’ is a sweet dumpling using glutinous rice flour and stuffed with grated coconut sweetened using palm sugar. This kuih koci recipe is a variation using black glutinous rice flour. This recipe also shows how coconut milk sauce is added to kuih koci for more flavour.

I was thinking of another simple kuih to make a few weeks ago and my mother suggested that I should recreate kuih koci. She shared how it was the first type of kuih which was taught to her by her mother-in-law. My paternal grandmother guided her on how to make delicious kuih koci using black glutinous rice flour, to be enjoyed by the big family of 3 generations!
There are many variations of kuih koci. In this recipe, I am going to share the version which is made from black glutinous rice flour or in the Malay language, it is known as “tepung pulut hitam”. “Tepung pulut” means glutinous rice flour while “hitam” refers to the colour black. Personally, I enjoy eating black glutinous rice kuih koci as I love everything that is made from black glutinous rice. Yes, I am a huge fan of the [Black Glutinous Rice Dessert](/recipes/pulut-hitam). It must be due to the chewy texture which helps to contain the taste as I savour it. In this case, it’s the flavours of the toffee sweetness that comes from a very special palm sugar, gula melaka and the coconut.
A substitute for grated coconut is desiccated coconut. Since desiccated coconut is not at all moist, quite a bit of water is needed to ensure it softens and soaks up the flavour of the palm sugar.
If black glutinous rice flour is not available, white glutinous rice flour may be used. Optionally, add some pandan aroma or flavouring to the dough. This would give the familiar wonderful fragrant that belongs to most Malaysian kuih. Assalamualaikum hai semua. Resepi yang saya kongsikan kali ni adalah resepi kuih koci daripada mak saya. Resepi ni adalah resepi yang mak saya gunakan untuk buat jualannya hari-hari. Dia sangat berbesar hati untuk kongsikan resepi ni kepada semua. Dalam resepi ni, saya buat inti kelapa manis yang agak banyak sebab inti ni boleh di simpan lama (simpan dalam peti ais). Jadi, bila nak buat kuih lain, dah senang dah sebab tak perlu buat inti kelapa lagi. Kalau nak buat sikit untuk adunan ni saja, cukup sekadar guna 1 cawan kelapa parut sahaja. Santan juga boleh disimpan beberapa hari di dalam peti ais kalau nak buat kuih koci ni lagi. Pastikan beras pulut hitam dikisar betul-betul halus supaya kuih koci tak terasa berbiji-biji. Daun pisang perlu dilayur di atas api sebelum digunakan supaya daun menjadi lembut dan mudah untuk membungkus kuih koci. Potong sedikit melengkung dihujung daun pisang untuk memudahkan pembungkusan kuih ni. Pastikan kuih koci dibungkus semasa panas supaya daun pisang menjadi sedikit layu dan memberikan aroma kepada kuih koci. 1 adunan ni boleh dapat lebih kurang 22 biji kuih bergantung pada saiz yang kita buat. 150 gram Gula Kabong @ Gula Melaka
¼ cawan Gula
½ sudu kecil Garam

Resepi Kuih Koci Pulut Hitam
Bahan – bahan :
Bahagian Inti Kelapa
2 cawan kelapa parut
1/2 cawan air gula merah
2 sudu besar gula
1 sudu besar tepung gandum

1/2 cawan beras pulut hitam halus (boleh kisar beras pulit hitam dan ayakan)

Cara – cara :
Bahagian Inti Kelapa
Masukan kelapa parut, air gula merah dan gula ke dalam sebuah periuk. Kacau rata dan masak di atas api yang sederhana. Kemudian apabila sebati, masukan tepung gandum dan kacau rata. Tutup api dan biarkan ia sejuk.
Bahagian badan kuih
1. Masukan semua bahan ke dalam sebuang mangkuk atau bekas. Uli adunan sehingga ia menjadi doh. Masukan air sedikit demi sedikit sehingga adunan tidak melekat ditangan dan membentuk doh. (anggaran 1 cawan).
2.Kemudian ambil sedikit doh, isikan dengan sedikit inti kelapa parut yang dimasak tadi. Tutup kemas dan bentukan bulat.
3. Sediakan daun pisang yang dilayur, ambil sedikit minyak masak sapukan di permukaan daun itu.
4. Kemudian ambil 1 doh kecil dan lipatkan kemas seperti yang ditunjukan di dalam video.
5. Kemudian apabila pengukus sudah panas, kukus kuih koci ini selama 30minit atau sehingga masak.
Hasilnya kuih koci yang sangat sedap, teksturnya kenyal di luar dan inti yang lembut di dalam.

Black Pulut Koci Cake Recipe
Ingredients:
Coconut Core Division
2 cups grated coconut
1/2 cup brown sugar water
2 tablespoons sugar
1 tablespoon wheat flour
Cake body ingredients
2 cups glutinous flour
2 tablespoons wheat flour
1/2 cup fine glutinous rice (can grind black glutinous rice and sieve)
1/4 cup coconut milk
1 cup of water (enough water)
a little bit of salt
melted banana leaves
Ways:
Coconut Core Division
Put grated coconut, brown sugar water and sugar in a pot. Stir well and cook over medium heat. Then when well blended, add the wheat flour and stir well. Turn off the heat and let it cool.
The body part of the cake
1. Put all the ingredients in a bowl or container. Knead the dough until it becomes a dough. Add water little by little until the dough does not stick to the hands and form a dough. (approximately 1 cup).
2.Then take a little dough, fill it with a little grated coconut core cooked earlier. Close neat and round shape.
3. Prepare the melted banana leaves, take a little cooking oil and apply on the surface of the leaves.
4. Then take 1 small dough and fold it neatly as shown in the video.
5. Then when the steamer is hot, steam this koci cake for 30 minutes or until cooked through.
The result is a very tasty koci cake, chewy texture on the outside and soft core on the inside.

The taste of Kuih Koci is similar to Pandan Angku Kuih, both are made by filling pandan glutinous rice dough with sweet grated coconut. Kuih Koci is wrapped with banana leaf while Angku Kuih is printed with "tortoise" pattern using a mould.
