28-year-old Sarah Sng disliked cooking but was always interested in starting her own business. She got a taste of what it’s like running an F&B outlet when her parents opened a small Peranakan eatery, giving her an opportunity to learn the ropes. Inspired to make Peranakan cuisine more accessible and affordable, Sarah left her corporate job to dive into the hawker scene.
When she first opened the stall, Sarah’s dad was the main chef and Sarah prepped only the side dishes. Determined to run the stall independently, she started learning to cook from her father. It wasn’t easy and came with its share of challenges. It took Sarah over a year to master the culinary craft and nuances of Nyonya food. Now, she has customers commenting that her food reminds them of their grandmothers’ cooking.

World's First and Only 1 star Peranakan Cuisine Michelin restaurant CandleNut Dempsey Singapore
Peranakan cuisine or Nyonya cuisine comes from the Peranakans, descendants of early Chinese migrants who settled in Penang, Malacca, Singapore and Indonesia, inter-marrying with local Malays. In Baba Malay, a female Peranakan is known as a nonya (also spelled nyonya), and a male Peranakan is known as a baba. The cuisine combines Chinese, Malay, Javanese, South Indian, and other influences.

During my food trip in Penang, Malaysia, Auntie Gaik Lean's Old School Eatery was one of the best meals I ate. They specialize in Nyonya or Peranakan food, a combination of Malay and Chinese cooking, flavors, and ingredients, creating a true fusion that’s ultra flavorful.
We luckily got in for lunch at this Michelin One Star restaurant, and the food was outstanding. I especially loved the stingray curry (curry tumis) with lots of torch ginger flower.
Highly recommended for one of the best formal restaurants in Penang, Malaysia.

Daisy’s Dream Kitchen is a small family run restaurant in the Clementi area of Singapore. The restaurant not only serves amazing food, but it also has a unique story. But she started off at a food court, and sold just a few minimum Peranakan dishes. Eventually they opened a full restaurant called Daisy’s Dream Kitchen. The passion of service and hospitality, paired with delicious food, is what made it such a good experiences to eat there.
Let’s just quickly talk about Peranakan food. Peranakans are Straits born Chinese - so Chinese descendants born someone along the straits of Malacca in Malaysia, Singapore, and a few in southern Thailand. They are known for adapting and sometimes intermarrying with the local Malay population, and so the food reflects a unique blend of both Chinese and Malay, and it’s an amazing combination.
When Ying and I ate at Daisy’s Dream Kitchen, they brought us out a selection of some of their most popular signature dishes, and we had an absolute feast of a meal including stink beans with anchovies, a fried fish with sambal, ngo hiang, a meatball soup, and the dish that I had for the very first time, buah keluak - and one of the restaurant specialities. The nut that’s the main part of this dish, is buried for about 11 days, they cooked, and then prepared. I think the nut was emptied out and mixed with some minced meat, and then cooked in a curry. It was so unique and so delicious - it kind of tasted like chocolate cake and rye bread within a curry.
Daisy’s Dream Kitchen is a great place to eat Peranakan food in Singapore.
I had met Ray, the son of Daisy while I was in Bangkok, and they invited me to eat at their family restaurant. I didn’t pay for our food, as the family was very kind, but this is not a sponsored video.

Peranakan cuisine or Nyonya cuisine comes from the Peranakans, descendants of early Chinese migrants who settled in Penang, Malacca, Singapore and Indonesia, inter-marrying with local Malays. In Baba Malay, a female Peranakan is known as a nonya (also spelled nyonya), and a male Peranakan is known as a baba. The cuisine combines Chinese, Malay, Javanese, South Indian, and other influences.
Candlenut, a 1 star Michelin establishment, is located at Dempsey. It was a gorgeous restaurant and I was here for lunch! Their website is https://www.comodempsey.sg/restaurant/candlenut
For starters, we had the Ngoh Hiang and the Snake River Farm Kurobuta Pork Neck Satay. Fanciful name!
For the mains, we had 4 dishes.
Chap Chye, - Cabbage, black mushroom, pork belly, lily buds, black fungus, vermicelli braised in rich
prawn and pork stock
Westholme Wagyu Beef Rib Rendang - Dry caramelised coconut curry with spices and
turmeric leaf garnished with serunding
Blue Swimmer Crab Curry - A Candlenut signature, turmeric, galangal, coconut milk, kaffir lime leaf
Ikan Bakar- Charcoal grilled spiced local red snapper fillet, with fresh red chilli sambal, charred dragon chives
All with white rice.
For dessert, Cendol! Young Coconut Shaved Ice, Homemade Pandan Jelly, Sago
Pearl, Silky Coconut Custard and Gula Melaka

With more than 40 years of experience cooking Peranakan dishes, Aunty Alice's mastery is apparent in the classic, homely cuisines offered on her menu. Pursuing her passion of as the founder of Nyonya House, she offers authentic signature cuisines like Babi Pongteh, Ayam Buah Keluak, Curry Chicken, Assam Prawns, and more. Babi Pongteh is cooked with sugarcane that gives it a natural mild sweetness. Babi Pongteh pork is so well braised and soft that it almost melts in the mouth! Meanwhile, Ayam Buah Keluak goes through a time consuming preparation and cooking process. Just the Buah Keluak nuts alone take days to prepare. But nevertheless, the result is a tasty dish of tender chicken infused with the earthy flavours of the Buah Keluak pulp.
Alice's homemade Rempah (spice paste) is the soul of her several cuisines. Rich and full of layered flavours, they are marvellous concoctions of many spices and herbs such as lemongrass, candlenut, dried chilli, etc.
Bento sets, affordably priced at $6.80, are also offered. Each set comes with meat and greens. You can have your flavoured choices like Babi Pongteh, Assam Pedas Fish, Rendang Chicken, etc. The quality of the dishes here will never fail to amaze!

During my food trip in Penang, Malaysia, Auntie Gaik Lean's Old School Eatery was one of the best meals I ate. They specialize in Nyonya or Peranakan food, a combination of Malay and Chinese cooking, flavors, and ingredients, creating a true fusion that’s ultra flavorful.
We luckily got in for lunch at this Michelin One Star restaurant, and the food was outstanding. I especially loved the stingray curry (curry tumis) with lots of torch ginger flower.
Highly recommended for one of the best formal restaurants in Penang, Malaysia.

3 stalks fresh lemongrass, white part only
150 g shallots
20 g fresh turmeric
3 garlic cloves
5 g shrImp paste (belachan)
100 g chilli paste
2 sprigs curry leaves
30 g sugar
1 tsp salt
50 g cooking oil
2 tbsp tamarind paste, deseeded
400 g water
2 torch lilies, bud only, sliced
300 g tomatoes, cut in wedges
500 g Spanish mackerel fish, cut in pieces (3-4 cm)
5 pieces ladies’ fingers, cut in 6-7 cm length
Preparations
1. Place lemongrass, shallots, turmeric and garlic in mixing bowl, blend 10 sec/speed 8. Scrape down sides of mixing bowl with spatula.
2. Blend 10 sec/speed 8. Scrape down sides of mixing bowl with spatula.
3. Add dried shrimp paste, chilli paste, curry leaves, sugar, salt and oil, cook 10 min/120°C/speed 1. Meanwhile, mix tamarind paste with water in a bowl and set aside.
4. Insert butterfly whisk, add torch lilies and reserved tamarind mixture, cook 7 min//120°C/speed 1.
5. Add tomatoes, fish and ladies’ fingers, cook 7 min//120°C/speed Spoon. Serve immediately.
